The "Legends" were the original canon of Star Wars, the books written after Return of the Jedi in about 1992 I believe. They were previously known as the Expanded Universe, and the fact that they were essentially nullified just because Disney said so was disappointing and frustrating.
I've read nearly all of them, and I can say that the storylines were far better than anything Disney ever wrote. Anyway, it's hard to encapsulate the entire list, especially as there were many series within the EU. If you want to start somewhere, you kind of have to begin at Heir to the Empire. If you can finish those 3 books, next should be the Jedi Academy trilogy.
In my opinion, Academy should have been Episodes 7 through 9.
